Short Description

The project aims to develop high-energy, high-protein nutritious food for seniors and thickened beverages for those with swallowing disorders (dysphagia). The goal is to address prevent age-related frailty (foods) and manage dysphagia (beverages), which are significant challenges for the aging population. Dysphagia, affecting 40% of those aged 70+, is prevented by sufficient food intake and managed through thickened beverages and texture-modified foods. The project will leverage previous research to develop fortified ready-to-eat meals and superior thickeners for dysphagia management.
The expected outcomes include improved quality of life for seniors, decreased healthcare costs, and increased sales of ready-to-eat meals and thickened beverages for seniors. The project is divided into five sub-projects,
including project preparations, development and evaluation of thickened beverages, development of fortified meals, evaluation of new product concepts, and determination of senior preference. The project involves multiple
partners, including research performers, food industry and the elderly care in a municipality. The project aims to bring about a breakthrough in the quality of life for seniors, a step change in healthcare, and increased sales of ready-to-eat meals, beverages and thickeners for seniors.
